These cherry tomatoes are cool (and not just because I wrote the recipe) and refreshing. Eat them alone (or with a friend) or on a salad, a veggie burger, or pasta.
Halve (or half) your cherry tomatoes. Cut up some small slices of onion and chop it fine. Take a clove of garlic, smash it with the back of a knife, then cut it into thousands of pieces. Or hundreds. But at least dozens. Then put tomatoes in a bowl, add onions and garlic. Chiffonade some basil, or just cut it really fine. Add to the bowl along with a good pinch of salt, lots of fresh cracked pepper, several really big glugs of good quality extra virgin olive oil, a couple tablespoons of good vinegar (apple cider or balsamic work really good here) or use a lemon instead of the vinegar. Let the flavors get together for awhile before devouring.
