Gregg's Pickled Peps


  • 1 cup water

  • 1 cup distilled vinegar

  • 3 TBSP sugar

  • 1 TBSP kosher salt

  • 2 to 3 garlic cloves, peeled

  • Sliced jalapenos or other peppers

  • Sliced carrots, cut into coins

  • 1 tsp dried oregano


Add water, vinegar, salt, sugar, and garlic to saucepan.  Bring to a boil, then remove from heat.  Add jalapenos, carrots,  and oregano.  Transfer peppers, carrots, and garlic to a jar, cover with liquid.  Let cool, then refrigerate.
