Ingredients:
1 head Wild Willow Farm cauliflower
4 tbsp extra virgin olive oil
Kosher Salt
Ground black pepper
1/2 cup panko bread crumbs
1/2 cup freshly grated parmesan cheese (optional)
Preheat oven to 425 degrees. Slice cauliflower into 1/2" steaks latitudinally and place in single layer on baking sheet. Drizzle with 3 tbsp oil, salt and pepper. Roast for fifteen to twenty minutes.
In a small bowl, mix panko with the remaining olive oil. Sprinkle mixture on top of cauliflower, roast another ten to fifteen minutes until golden brown. Add parmesan (optional) and bake for another minute or two. Serve hot or room temperature.
