Sautéed Swiss Chard

Fauna and Persephone like Swiss Chard too


2 TBSP Olive Oil

1 Onion, sliced

2 Cloves Garlic, minced

1 Bunch Swiss Chard or other greens

½ Cup Vegetable or Chicken Stock

1 Can White Beans or Chickpeas, drained

Salt and Pepper

½ Lemon


Preheat skillet over medium-high heat and add oil. Sauté onion for a couple minutes, then add garlic. Cook for one minute, do not let garlic burn. Remove leaves from stems and chop into 2-inch pieces. Cut stems into 1-inch pieces and add to the pan. Sauté stems for a couple minutes. Add greens and vegetable stock, cook for a few minutes until cooked down and wilted, stirring frequently. Add the can of beans and warm through, season with salt and pepper, and squeeze lemon over dish. Serve hot.
