Sheet Pan Vegan Roasted Eggplant with Garlic


  • 1 eggplant, cut crosswise into 1/2-inch slices

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon nutritional yeast (sub smoked paprika)

  • ½ teaspoon Italian seasoning

  • 1 teaspoon salt


  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

  • Place eggplant slices in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with garlic powder, nutritional yeast, and Italian seasoning.

  • Roast in the preheated oven until golden and crispy, about 25 minutes. Sprinkle with salt.
