Sheet Pan Vegan Roasted Eggplant with Garlic
1 eggplant, cut crosswise into 1/2-inch slices
2 tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon nutritional yeast (sub smoked paprika)
½ teaspoon Italian seasoning
1 teaspoon salt
Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
Place eggplant slices in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with garlic powder, nutritional yeast, and Italian seasoning.
Roast in the preheated oven until golden and crispy, about 25 minutes. Sprinkle with salt.
